Drafted by the Toronto Blue Jays in the 48th round of the 2009 MLB Amateur Draft as a member of Team Ontario and the Canadian Junior National Team, Gibbs opted to focus on his education and attend the University of Maine. 

While at Maine, Gibbs was a two-time Second Team All-Conference starting pitcher and was selected to the All-Rookie team his freshman year. As a member of the Maine’s starting rotation the Black Bears captured the 2011 America East Title and recorded Maine's only win at the NCAA Regional. Gibbs followed the impressive season as a member of the Chatham Anglers in the prestigious Cape Cod Summer League. 

Gibbs concluded his collegiate career as a Captain of the Black Bears and was selected in the ninth-round pick by the Arizona Diamondbacks in the 2012 MLB Amateur Draft. 

Coach Gibbs began his coaching career in 2016 as a member of the coaching staff for the Humber Hawks. Under the Guidance of Head Coach Matt Ferreira, Gibbs was promoted to Associate-Head Coach in 2017 while finishing the year with a OCAA Silver Medal. 

Gibbs led the Hawks pitching staff to a record 2018 season, winning 18-straight games to capture the program's first NCBC and OCAA titles.

Promoted to Interim-Head Coach in 2019 the Hawks defended their title to win another OCCA Gold Medal
